The mora chile is wrinkled in appearance and has a brownish-red color.
Mora means 'blackberry'. Growing to 4 cm in length and 1.25-3 cm
wide. Heat level is 5.
Medium fleshed; has a sweet mesquite wood flavor with strong tobacco
and plum tones. Like the chipotle chile, the mora is a type of dried,
smoked jalapeno. But it’s a bit sweeter and more raisin-like than the
brown chipotles.
You can use Mora chile in enchilada sauces, chili, stews, barbecue ribs,
and corn bread or take advantage of their distinctive smoky flavor in
sauces such as Sweet Mora Sauce.
