corn tortillas, sugar, salt and various spices.
A mole poblano pasta is a combination of: Mulato, Pasilla and Ancho
peppers sometimes aslo with Chipotle dry pepper, Red Tomato, Peeled
almonds, Peeled peanuts, Pepper’s seeds grind (mulato, pasilla, ancho,
chipotle) Raisings, dry bread or dry Tortilla, Cinnamon, Black pepper,
Clove, Sesame seeds, anise, dark chocolate and a little sugar and salt.
Serving Suggestion: Mix as much Mole as you want in the following
proportions: 1 part Mole to 3 parts stock, or 1 part Mole to 2.5 parts
water. Stir slowly but consistently on a low heat until smooth. Pour the
sauce over grilled or steamed meat, chicken or fish.
